VEGETABLE PATTIES


 Quantity : 12 patties |  Preparation Time: 15 minutes |  Cooking Time: 20 minutes

INGREDIENTS

  • Leek 100g
  • Carrot 200g
  • Potatoes 300g
  • Cauliflower florets 200g
  • Eggs 4
  • 8 tsp organic red palm oil
  • Parmesan cheese 30-50g
  • Parsley 1 bunch
  • Salt

PREPARATION

 

Wash and cut the vegetables and parsley, pluck the leaves out roughly on the latter.

Preheat the oven to 180°C.

Cut the leek in 4 length, then slice it.

Cut the carrot into large pieces, put it in the bowl of a blender and mix (using the pulse key) until you get pieces of carrots as big as a grain of rice.

Do the same with the potato and the cauliflower florets.

In a large bowl, mix the vegetables, eggs, parmesan, half of the palm oil, chopped parsley and salt.

Cover a baking sheet with parchment paper, and arrange the balls of the mixture (you can use an ice cream scoop, it is very convenient). Press them slightly to obtain patties, put 1/4 teaspoon of red palm oil on each patty and bake for about 20 minutes of baking.

Keep the patties warm and repeat with the rest of the mixture.

 

Serve with a nice green salad.
